Ingredients

  • 1 1/4 c. flour
  • 1 c. quick oats
  • 1/2 tsp. salt
  • 1 tbsp. liquid food sweetener
  • 1 tsp. vanilla
  • 1/2 c. vegetable shortening
  • 2 c. drained unsweetened canned fruit such as apples, cherries
  • 3 tbsp. fruit juice

Diabetic fruit bars

  1. Mix flour, oats, salt, sweetener, vanilla and vegetable shortening with fork until crumbly.
  2. Add juices to let crumbs stick together. Spread half on bottom of square pan.
  3. Place layer of fruit, spread rest of crumbs on top.
  4. Bake, cool and cut in squares.
