• 1 onion, chopped
  • 1–2 sweet green peppers/capsicums, chopped
  • 2 teaspoons vegetable oil
  • 1 cup unsalted tomato sauce e.g. low salt canned sauce
  • 1 teaspoon parsley, chopped
  • 1⁄4 teaspoon ground black pepper
  • 1 1⁄2 teaspoons garlic, minced
  • 1250g cooked white rice
  • 400g chicken breast, cooked (skin and bone removed), diced

Chicken and Spanish rice

  1. In a large skillet, sauté the onions and green peppers in oil for 5 minutes on medium heat.
  2. Add the tomato sauce, parsley, pepper and garlic and heat through.
  3. Stir in the cooked rice and chicken and heat through.
